TCHO traveled to Ghana, home of their co-founder Karl Bittong, to select just the right beans for "Chocolatey". Out of the thousands of bean lots they were offered, they chose the most perfect, intensely chocolatey (yes, that's actually an industry flavor term), with distinct hints of brown fruit.
Since flavor drives the TCHO decision matrix, they devote extreme attention to carefully time-sourcing beans - much of the flavor is in the timing of the fruit's development. Focusing on the choicest point of the Ghanaian growing cycle, they picked the most flavorful stage to gather beans.
